AIP-Friendly Pancakes
Yields around 18 pancakes
Ingredients:
- 1 cup Wild Zora AIP Classic Hot Cereal
- 3/4 cup cassava flour
- 1/4 cup tapioca starch
- 1/2 tsp baking soda
- 1 cup banana milk
- 1 1/2 tbsp apple cider vinegar
- 1/3 cup unsweetened applesauce
- 1 tsp date sugar
- 1/4 tsp ground cinnamon
- 1/4 tsp sea salt
- coconut oil (for cooking)
Directions:
- Make banana milk (1 cup water + 1 ripe banana, blend until smooth).
- Make banana “buttermilk” by combining Banana Milk and Apple Cider Vinegar in the bottom of your blender.
- Allow to sit while your griddle heats to 300 degrees.
- Add dry ingredients into blender w/ “buttermilk”.
- Add in applesauce.
- Blend until smooth.
- Add coconut oil to the griddle.
- Pour batter onto the griddle, making these pancakes slightly larger than a silver dollar.
Stewed Apples with Cinnamon:
- Chop up one large apple into small cubes (I did not peel the apple – the peel has the most nutrients).
- Stew the apple with a bit of water and about 1/ 4 teaspoon of ground cinnamon for about 5 minutes until the apples are soft.
- Add 1/2 tablespoon of date sugar or maple syrup. (Optional)
Berry Sauce with Fresh Lemon:
- Boil/stew about 1 cup of frozen berries (blueberries, raspberries, blackberries) on low heat with a little bit of water for about 5 minutes until soft.
- Then add a few drops of lemon juice. (If you like your berries sweeter, you can add a tablespoon of date sugar and omit the lemon juice.
AIP-Friendly Maple Coconut Cookies
Yields 8-12 cookies
Ingredients:
- 1/2 cup (packed) Wild Zora AIP Classic Hot Cereal
- 1/2 cup cassava flour
- 1 tbsp tapioca starch
- 3/4 tsp baking soda
- 1/4 tsp ground cinnamon
- 1/8 tsp sea salt
- 1/4 cup large coconut flakes
- 1/4 cup maple syrup
- 2 tbsp date sugar (or coconut sugar)
- 3 tbsp coconut oil
- 2 tbsp unsweetened applesauce
- 2 tsp vanilla extract
Directions:
- Preheat oven to 350 degrees.
- Combine Wild Zora AIP Classic Hot Cereal, flour, starch, baking soda, cinnamon, and salt in a small bowl.
- In a large mixing bowl, beat together coconut oil, date sugar, and applesauce until creamy.
- Add in the maple syrup and vanilla extract and beat until well combined.
- Slowly add your dry ingredients into the wet, scraping down the sides of the bowl as needed.
- Once thoroughly combined, stir in the coconut flakes.
- Using two spoons, scoop dough into roughly 2 tbsp-sized balls, spacing them at least 1 in apart on the baking sheet.
- Bake for 10-12 minutes or until golden brown.
- Allow to cool completely before enjoying!
